Vegan Shortbread Recipe

One of the nicest treats to make all year round. I've done this recipe a few years ago, but fancied updating it with more that's needed. So here is an updated version of my vegan shortbread recipe.

 Ingredients:

250g dairy-free spread
130g caster sugar
1 tsp vanilla extract
Pinch of salt
375g plain flour
150g vegan chocolate

Serves 12-16:
3.8g Protein
39.4g Carbs
256 Calories

How to make:
1. Preheat the oven to 160 degrees or Gas mark 6. Add greaseproof paper to a baking tray.
2. Add dairy free spread & sugar to a mixing bowl until smooth & creamy.
3.Add in the vanilla extract & pinch of salt & mix together.
4. Sift the flour & stir the mixture together.
5. Once the dough is formed, roll into a ball.
6. Knead the chocolate into the dough.
7. Wrap the dough in cling film & put in the fridge for 1 hour, but if you want the dough to set quicker, cut the dough into sections or in half & wrap up separately.
8. Roll the dough out onto a floured surface & cut as desired. Make sure they aren't too thick.
9. Bake in the oven for 12-14 minutes.
10. When slightly golden, take them out the oven & leave them to cool on a wire tray.
