I have been loving baking these vegan chocolate chip muffins recently. I have loads of ingredients in the cupboard to use up so I've wanted to do more baking recently. I shared me baking these muffins on my instagram stories and asked my followers if they wanted a recipe, and of course you lovely lot said yes! So here we are, a recipe has been handed to you on a plate to consume and create yourself. Enjoy!
Ingredients:
- 4 bananas
- 1/2 a cup of almond or oat milk or any plant milk you prefer (122g)
- 2 1/2 cups of self raising flour (375g)
- 1 1/2 tsp baking powder
- 1/2 cup of white or brown sugar (95g) - brown is good to use to add in gooey bits to the muffins
- 1/4 cup of coconut oil (50g)
- 1 tsp vanilla extract
- 1/2 cup vegan dark chocolate chips - I actually used the entire bag as why not!
How to make:
- First step is pre-heat the oven to gas mark 6, 180 degrees/355 Fahrenheit. Whack out a muffin tin, depending on if you use cake cases or not, grease the tin with vegan butter, olive oil or coconut oil.
- Combine the bananas and plant milk in a blender or mash with a fork.
- Combine all the dry ingredients in a bowl apart from the chocolate chips then add the banana and plant milk mix. Then add the chocolate chips and mix.
- Scoop the batter in the muffin tray/cake cases evenly.
- Bake in the oven for 20-25 minutes. To see if they have cooked all the way through use a knife or toothpick to poke into the muffins and see if anything sticks to it, if its clean they are good to come out the oven.
- If you have the muffins directly in the tin, leave them for 5 mins then remove them from the tray and place on a wire rack. If they are in cake cases then remove them from the tin and place them on a wire rack, plate or on the side to cool down.
