Easter Rocky Road Recipe

Easter will soon be upon us, and yet again in the UK we will be celebrating it in lockdown. So to cheer us all up, why don't we create some fun, tasty goodies. This is a great thing to do if you want to use up your Easter eggs, biscuits and whatever things you want to use up in the cupboard or snack drawer. This recipe is vegetarian friendly, but if you wanted to make it vegan, all you have to do is swap the chocolate out for vegan chocolate. So let's tuck in!

Easter Rocky Road Recipe

Ingredients:

  • Lots of Easter eggs - doesn't really matter how many as they all melt down anyway
  • 1/2 a pack Vegan Marshmallows
  • 1 bag of Mini Eggs
  • 1/2 a packet of Biscuits -  you can use any biscuits you have left over (I used custard creams and ginger biscuits in this one)
  • Easter chocolates for toppings - Malteser bunnies, creme eggs, Kit Kats, left over celebrations or quality street chocolates - honestly any chocolates you want to use up you can stick in this!

How to make:

  • Melt down all of your Easter eggs or chocolate bars on the hob in a saucepan or in a bowl in the microwave - keep checking and string the chocolate so it doesn't burn in the middle.
  • In a separate mixing bowl, crush up all the biscuits together into little pieces & add in the marshmallows.
  • Once all the chocolate is melted, mix it in with the biscuits and marshmallows so everything is covered in chocolate.
  • Add some greaseproof paper to either a plastic box, baking tray or anything that you prefer. Pour the the mix into the box and make sure its all even.
  • Time for toppings! Add in whichever toppings you desire and squish them into the mixture so they are poking out at the top.
  • Once all the toppings are in, place them into the fridge to set for around 1-3 hours.
  • Once the mix is set, take out the fridge, pull the mix out of the box with the greaseproof paper.  Once on a plate, remove the greaseproof paper, cut up the rocky road in which ever way you prefer, serve and enjoy!
