Vegan Biscoff Cheesecake Recipe

A delicious vegan dessert, high in protein & perfect for a filling snack or dessert after a meal. Seeing as Veganuary is coming up, this is a lovely recipe for you to try out. I've made this a few times now & its so tasty & filling, as well as a fun way to get your protein intake up. This recipe is for one serving, but if you wanted to make it into a full size cheesecake, I'd say maybe times the ingredients by 4-6, depending on how many people you want to serve it to (or for yourself, I'm the same hehe!).

Ingredients:
2 Biscoff biscuits crumbled
1 tbsp vegan butter melted
1 scoop MyVegan vanilla soy protein isolate
2 tbsp vanilla soy yoghurt
2 tbsp Biscoff spread melted
1 Biscoff biscuit for topping - 1 half broken & half crumbled

Serves 1: 
28.9g protein
35.6g carbs
479 calories 

Recipe:
1. Crush the biscuits until like breadcrumbs in a small container.
2. Add in melted butter & mix.
3. Mix together the protein powder & yoghurt.
4.Add to the top of the biscuit.
5. Melt the biscoff spread & add to the top of the yoghurt.
6. Refrigerate for 3 hours.
7. Top with a biscuit in the middle & crumble the remaining around the top.
